You will need:
2 tablespoons butter, melted and cooled
3 tablespoons brewed coffee at room temperature
1 tablespoon canned pumpkin
1/4 cup sugar
1/3 cup Original Bisquick™ mix
1/2 teaspoon pumpkin pie spice
Pinch of salt
Whipped cream, for serving
Ground cinnamon, for serving
- In small bowl, combine melted butter, egg, coffee and pumpkin with a whisk. Add sugar, Bisquick, pumpkin pie spice and salt. Make sure it is mixed well. Batter may be lumpy.
- Split batter into 2 mugs that are microwave safe. Microwave uncovered on high for 2 minutes. Cool before serving.
- Top with whipped cream and a sprinkle of cinnamon.
